Method
Preheat the oven to 350°F.
Stir the ground flax seeds and water together in a small bowl and set aside.
Add the bananas, dates, cinnamon, and vanilla to a food processor and process until smooth. Add the nuts, if using, and pulse a few times to break them up.
Add the flax mixture, banana mixture, and rolled oats to a large bowl and stir well to combine.
Use your hands to make 1-2 inch balls, cookies, or whatever you prefer. I recommend flattening them a little so they don’t roll all over the place. Place on a parchment-lined baking sheet and bake for 20 minutes. Flip the clusters over and bake for another 5-10 minutes, shorter for a softer finish and longer for a dryer finish.
To serve, sprinkle with WYW Date Powder for added sweetness.
