    This salad keeps incredibly well in the fridge or cooler and we love packing it into mason jars. All it takes is some chopping, blending up a creamy sauce, bringing them together, and you're done!

    Creamy Chickpea Salad

    A go-to for picnics, camping, and packed lunches.


    Ingredients:

    • Dressing
    • ½ cup raw cashews
    • ½ cup water
    • 3 tablespoons lemon juice
    • 2 tablespoons Dijon mustard
    • 2 teaspoons apple cider vinegar
    • 1 teaspoon curry powder or any WYW Indian Seasoning
    • 3-4 garlic cloves

    • Salad
    • 2 15 oz. cans chickpeas, drained and rinsed
    • 3 ribs celery, chopped
    • 1 pint cherry tomatoes, quartered
    • ½ medium red onion, diced
    • black pepper, to taste

    Instructions:

    Place all of the dressing ingredients into a high-speed blender and blend until smooth. You can swap the curry powder for any of the Well Your World seasoning blends to change it up from time to time.

    Mash the chickpeas with a potato masher in a large mixing bowl, leaving a chunky texture.

    Add the celery, onion, cherry tomatoes, and dressing. Mix well and grind on some black pepper.

    Enjoy on its own, in a wrap, in a sandwhich, on a bed of greens, and more!
