Method
Preheat the oven or air fryer to 450°F.
Cut the cooked potatoes into wedge fries by cutting the potato in half lengthwise, and then then cutting each of those halves into thirds. Bake or air fry for 20-30 minutes, until you've reached your desired amount of crispiness.
While the potatoes are cooking, sauté the onion and mushrooms in a skillet on medium-high heat, along with a generous amount of veggie broth.
Prepare the Mushroom Gravy by adding all of the ingredients to a high-speed blender and blending until smooth. Repeat the same steps with the Cheese Sauce.
To assemble the poutine, start with the fries and add a generous amount of mushroom gravy. Add the sautéed mushrooms and onions on top along with a few dollops of cheese sauce. Enjoy!
