Ingredients

Poutine

  • 3 russet potatoes, cooked and cooled overnight
  • 1 yellow onion, diced
  • 1/2 pound mushrooms, diced
  • 1 handful fresh chopped parsley or chives (optional)


Mushroom Gravy

  • 1/2 cup WYW Mushroom Gravy Mix
  • 1/4 cup raw cashews
  • 1 teaspoon tamari (optional)
  • 1 &1/4 cups hot water

Crispy baked fries topped with savory mushroom gravy, creamy cheese sauce, and sautéed mushrooms and onions—all without the oil or dairy. This healthier take on the classic Canadian dish gives you all the comfort and flavor you're craving, minus the guilt.

Method

Preheat the oven or air fryer to 450°F.

Cut the cooked potatoes into wedge fries by cutting the potato in half lengthwise, and then then cutting each of those halves into thirds. Bake or air fry for 20-30 minutes, until you've reached your desired amount of crispiness.

While the potatoes are cooking, sauté the onion and mushrooms in a skillet on medium-high heat, along with a generous amount of veggie broth.

Prepare the Mushroom Gravy by adding all of the Mushroom Gravy ingredients to a high-speed blender and blending until smooth. Repeat the same steps with the Cheese Sauce.

To assemble the poutine, start with the fries and add a generous amount of mushroom gravy. Add the sautéed mushrooms and onions on top along with a few dollops of cheese sauce. Enjoy!
