Pasta Carbonara

Ingredients

  • 8 oz. box pasta
  • 1 10-12 oz. bag frozen chopped zucchini


Sauce

  • 1/2 lb. fresh or frozen chopped mushrooms
  • 1/2 teaspoon liquid smoke (optional)
  • 2 cups soy milk
  • 1/4 cup WYW Nooch
  • 1/4 cup WYW Mushroom Gravy Mix OR Cheese Sauce Mix
  • 1 tablespoon lemon juice
  • 2 tablespoons pine nuts (optional)
  • 1/2 cup fresh parsley, chopped


To Serve

  • crushed red pepper or black pepper

Method

Cook the pasta according to package instructions. In the last couple minutes of cooking, add the frozen zucchini to the pot. Strain out the water and set aside. 

While the pasta is cooking, prepare the sauce. Add the mushrooms and liquid smoke to a saucepan with a splash of water and sauté on medium-high heat. Once the mushrooms shrink, whisk in the soy milk along with the remaining ingredients except for the parsley. 

Bring the sauce up to a boil, reduce the heat, and simmer for a few minutes. Remove from heat and mix in the parsley. 

Combine the pasta with the sauce and mix well. Top with some crushed red pepper or black pepper, enjoy!
