You and I both know that everything is cuter is bites, so today we’re making some vegan, oil-free “Meatloaf Bites” that are so easy for serving and entertaining. You guys have been asking for finger food and potluck recipes and this is the first in our new series! We enjoyed making this lentil-based meatloaf in small muffin-sized portions because each bite has that delicious, crunchy crust, which is one of the highlights of any meat(less) loaf. Frozen foods are a lifesaver when it comes to saving time in the kitchen especially when you follow a whole food plant based lifestyle. Having chopped veggies and fruits at the ready in your freezer makes it so that we can enjoy “fast food” again. Sure we like to cook from scratch sometimes and enjoy fresh produce, but nothing can beat throwing a few bags of fresh veggies into a pot (or Instant Pot!) with some cans of beans, tomatoes, and spices and calling it a meal. Oops, we did it again. We tried another TikTok viral video trend, that is. You remember our first viral TikTok experience when we did the highly popular tortilla hack with our own homemade red lentil flatbread tortillas. This time it was the food hack taking over the world: Baked “Feta” Pasta. Inherently not vegan, we sought to not only veganize this viral trend in our own healthy way, but to add an exciting twist to it by doing it in the pressure cooker! What we love about this recipe is it requires zero chopping, you can set it and forget it, and it is deliciously flavorful and fast.

Mmmm… nachos… Dillon and I BOTH have an affinity for Latin flavors and nachos are no exception. When we do nachos at our house, we go all out. Just in time for Cinco de Mayo, we did a full nacho spread in our video today that I think will leave most of you drooling! Our toppings included: refried beans, a delicious faux taco “meat,” pico, red salsa, green salsa, Well Your World Cheese Sauce, guacamole, and chopped veggies. Did we go all out or what!? Ahhh.. pizza. A beloved Friday night splurge enjoyed throughout the world. But that takeout pizza is laden with cholesterol, fat, processed meats, and other garbage. And forget vegan pizza… Most vegan cheeses are just processed oil. So we try to make pizza at home, but all we can find in the grocery store are sauces laden with either sugar or salt or oil. Once you escape sugar, the sauce is salty. Try and find a salt-free product, and it has sugar. You can’t win! Well now you CAN win with Well Your World Pizza Sauce! We featured this sauce in our video in a new way. We love using the whole wheat lavash for quick and tasty pizza, but we wanted to try using a portobella and making mini portobella pizzas! We had never tried it before, but we figured, what could go wrong?! Watch our video to see how it came out!

Ah, kitchen gadgets. When I first went plant-based, I had an oven, a stove, and a microwave. As I didn’t really know how to cook, I found the microwave quite helpful as I could quickly cook potatoes in the event of an “emergency.” Soon though, I started adding some fancier gadget investments to my arsenal. We took this TikTok tortilla challenge to the next level with our homemade healthy tortilla and tried it 3 different ways. We made a Latin version with Dillon’s favorite: pico! We also made a fancy version with sautéed peppers and onions, mushrooms, sun dried tomatoes, zucchini, and hummus. We made a sweet version complete with bananas, strawberries, and homemade chia seed jam. Check out the video to see if this trend really lives up to all the hype! I love starch blaster because it's an easy, fast way to get a healthy, plant-based, vegan meal in a hurry. I don't always have time to meal prep or batch cook or think about what I want to eat, so this meal is a lifesaver! You just choose your starches, a few spices, add water, and pop it into your Instant Pot or pressure cooker. It is that fast and easy.

One of our all-time favorite YouTube Channels (outside of the WFPB eating space) is the Townsends YouTube channel. Their channel is dedicated to showing viewers the lifestyle of people living in the 18th century, including how to make dishes of the time using period-appropriate outfits and cookware. We picked a recipe from a 300 year old Vegetarian cookbook called “Onion Pye,” because the unique ingredients in the dish had me very curious. It was a mixture of apples, potatoes, and you guessed it.. Onions. We had a blast filming this video, and we hope you enjoy it too!

Our trip to Aldi was fun. Dillon got to try out the quarter-cart-release. We picked up some salsas and guacamoles to try. We perused the snack foods looking for some compliant, oil-free treats we could eat that were vegan. There were some fantastic buys that we didn’t need, such as $2.50 potatoes for a ten pound sack. We were excited about a specific type of hash browns we found in the freezer section… but you’ll have to watch the video to see what we end up doing with those! Did you think quiche was a thing of the past? I used to until I came up with this delicious plant-based quiche recipe. There are a few more steps to this one, but they’re all so easy. You can’t mess this one up! The mixture of polenta and tofu are so delicious with the vegetables and herbs. You won’t even miss the eggs with this one, and it will be sure to please a crowd.

When I think of quesadillas, I’m reminded of that unhealthy garbage I used to eat in a past life. Not anymore! These quesadillas are plant-based, healthy, and even salt, oil, and sugar free! Not only that, but they’re pretty easy too. We did two different quesadillas for this video: a “breakfast” quesadilla with an omelette-y style chickpea filling, and a “dinner” quesadilla with a sweet potato and bean filling. Both were delicious!

I love easy vegan dips because they are fast to make and you can use them in a variety of ways. You can use these vegan dips for entertaining, to line your wrap, as an addition to your salad, or just as a snack. Kids love them too! There's no need to buy the store-bought ones that are full of salt, oil, and garbage when you can whip these up at home and eat them guilt-free.

You might think stuffed bell peppers are a hassle, but they are really pretty easy! There's a couple tricks you can use to get them to be soft and delicious instead of raw and hard when they come out of the oven. I love these healthy vegan stuffed bell peppers because they're colorful and you can stuff them in so many ways.
