• One of the most difficult parts about traveling is the food. On a recent trip, we came up with a satisfying no-chop and no-heat wrap made entirely from ingredients found at Trader Joe’s. So the next time you find yourself in a bind while out of town or if you simply want a quick, healthy meal wherever you are, this recipe is a must.


    Do I need a kitchen?


    Nope! This wrap was created while we were staying in a hotel with just a fridge and it is seriously so easy to prepare! Begin with a piece of whole wheat lavash and add the beans for that starchy goodness. We decided to use fat-free refried beans, but any kind of beans will do the trick. We do recommend if you are using whole beans, use a fork and slightly mash them.

    Now all you need to do is sprinkle on the remaining ingredients. Some of the items in the wrap are frozen, so make sure to thaw them on the counter before preparing your wrap. If you have access to a microwave, you can definitely warm the items up in there.

    To give this wrap some flavor we opted to use a jarred salsa that does contain some salt. If you prefer to avoid salt completely, then you need to keep a bottle of WYW Fiesta Blend in your luggage (or pantry). Our Fiesta Blend is a delicious mix of Mexican herbs and spices that will take this wrap or any dish up a notch!

    Once you add everything to the lavash, use your hands to roll it up slowly and make a diagonal slice through the middle. When you slice the wrap on an angle, it not only makes it easier to enjoy but it also looks fancy.

    Trader Joe’s Wrap

    • • canned beans (refried, chickpeas, kidney, pinto, etc.)
    • • frozen rice, thawed
    • • frozen fire roasted corn, thawed OR canned corn
    • • frozen fire fajita peppers and onions, thawed
    • • salsa OR WYW Fiesta Blend
    • • cruciferous crunch OR any prepared greens

    Instructions:

    To assemble the wraps, spread some of the beans on one side of the lavash. If using whole beans, mash slightly with a fork. Sprinkle on as much of the remaining ingredients as you would like on top of the beans. Use your hands to roll up the wrap and cut in half. Enjoy!
