These Savory Oats Will Keep You Full All Fall

Autumn has arrived and there is nothing better than starting off your day with a warm, comforting meal especially during the colder months. These Fall Harvest Oats are a savory oatmeal dish that will give you those cozy fall vibes you crave while fueling your day. Butternut squash melts into the oats making it exceptionally creamy and satisfying. Don’t just limit yourself to sweet oatmeal, come to the savory side!

Savory oatmeal might sound odd, but don’t knock it until you try it! We aren’t the only ones who think that savory oats are delicious, when we posted our San Francisco Oats on YouTube, we received so much positive feedback. So you might want to take warning, once you try these savory oats you might not go back to sweet!

These oats are so simple to prepare! There is a little chopping involved, but you can skip the chopping by utilizing frozen pre-chopped vegetables and greens. We definitely recommend using frozen cubed butternut squash as it is so much easier than cutting up a fresh one.

We used our amazing Veggie Broth Mix in this recipe and it makes a difference! While you can use any veggie broth, you will not find one as affordable or flavorful as ours. Once you add everything to a pot all you need to do is heat, stir, and you are ready to eat!

To take your oats up a notch, sprinkle on some toasted pepitas for added richness and crunch. Other excellent toppings would definitely be Smoky Mushrooms, chopped green onion, or our delicious Everything Bagel Seasoning.

Fall Harvest Oats

A savory way to start your day when the temperature starts dropping!


Ingredients:

  • 2 cups WYW Veggie Broth (2 cups water + 2 teaspoons mix)
  • 1 cup water
  • 1 cup rolled oats
  • 1 cup frozen cubed butternut squash
  • 1 cup fresh or frozen kale, chopped
  • 1 cup fresh or frozen green beans, chopped
  • ½ cup fresh or frozen yellow onion, chopped
  • 3 tablespoons pepitas (green pumpkin seeds)
  • 2 tablespoons WYW Nutritional Yeast
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • ½ teaspoon dried marjoram
  • ½ teaspoon dried parsley
  • ½ teaspoon dried paprika
  • ¼ teaspoon ground turmeric
  • ¼ teaspoon dried sage
  • ¼ teaspoon dried rosemary
  • ¼ teaspoon dried thyme

 

  • toasted peptias, to serve 

Instructions:

Add all of the ingredients to a pot and bring to a boil, reduce the heat and simmer. If you like your oatmeal thicker, then only add 1/2 cup of water instead of the full cup. Let simmer for a few minutes, stirring occasionally. Enjoy!
