Sunrise Skillet

Ingredients

  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 1 10 oz. bag frozen butternut squash
  • 1 zucchini, chopped
  • 1-2 tablespoons any WYW seasoning like Zesty, Calypso, or Galaxy Dust
  • 1 teaspoon ground Aleppo chili or crushed red pepper
  • 2 roma tomatoes, chopped
  • 1/4 cup fresh mint, chopped
  • 3 cups cooked starch(es) of choice (rice, lentils, quinoa, etc.)

To Serve

  • lemon juice

Method

Add the onion, garlic, butternut squash, and zucchini to a saucepan and sauté over medium-high heat for a few minutes, adding a little water or veggie broth as needed to keep from sticking.

After a few minutes, add the WYW seasoning blend of your choice along with the ground Aleppo chili. Continue to sauté for a minute or two.

Then, add in the tomatoes and the mint. Sauté for a few more minutes. Stir in the starch(es) and allow it to heat through.

Squeeze on fresh lemon and enjoy!
