Microwave Mexican Buddha Bowl

Ingredients

  • 1 10-12 oz. bag frozen rice
  • 1/4 15 oz. can black beans, drained and rinsed
  • 1 handful frozen corn
  • 1 handful frozen bell peppers
  • 1/2 11 oz. can fire roasted Rotel or diced tomatoes
  • 1-2 tablespoons WYW Fiesta Blend and/or Chili Lime Seasoning

OR

  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon hatch green chili powder (optional)


To Serve:

  • chopped romaine lettuce
  • salsa
  • avocado

Method

Add all of the ingredients to a large mixing bowl and toss. Transfer to a microwave-safe bowl and microwave for about 5 minutes, or until tender.

Toss with a fork to fluff and place onto a bed of chopped romaine. Top with salsa and avocado. Enjoy!
