Potato Pizza


Tofu Pepperoni

  • 1 block extra firm tofu
  • 1 teaspoon black pepper
  • 1/2 teaspoon crushed red pepper
  • 2 teaspoons ground mustard seeds
  • 1 teaspoon fennel seeds
  • 2 teaspoons smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons WYW Date Powder
  • 1/4 teaspoon ground anise

Method

Preheat the oven to 350°F.

Slice the potatoes into 1/4" thick rounds, shortways or long-ways, depending on if you want circular or oval pizzas. Bake on a parchment-lined baking sheet for 15 minutes, then remove and set aside.

To prepare the tofu pepperoni, add all of the ingredients to a food processor and process until smooth. Then put it in a ziplock bag, cut the corner off and squeeze it through in strips, like a piping bag!

Prepare the potato pizzas by spreading a thin layer of Pizza Sauce on top of the pre-cooked potatoes. Top with your favorite veggies, and then pipe on the tofu pepperoni. You can also use your hands to form little clumps or any shapes you like! Bake in the oven for another 20 minutes or so with all of your toppings.
