Chickpea Omelet

Ingredients

Omelet Batter

  • 1 cup chickpea flour
  • 1/3 cup WYW Nooch
  • 1  teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon kala namak/black salt (optional)
  • 1 cup + 2 tablespoons soy milk


Omelet Veggies

  • diced red onion
  • diced bell pepper
  • chopped mushrooms
  • chopped zucchini
  • chopped spinach

Method

Preheat a non-stick electric griddle to 350°F.

Add all of the batter ingredients except the soy milk to a mixing bowl and whisk together. Pour in the soy milk and whisk again until it creates a smooth batter. 

This recipe will make two omelets, so pour about half the batter out onto the griddle. Feel free to lift and tilt the griddle to spread the batter around. You don't want your omelet to be too thick or it will not cook through.

Immediately sprinkle on any of the veggie that you'd like in your omelet. 

After a couple minutes, use a plastic or rubber spatula to carefully flip the omelet. Then gently press down with the spatula, so the omelet makes good contact with the griddle.

Cook for 2-10 minutes, just until you reach your desired level of doneness.

Serve with your favorite toppings like salsa, pico, and green onions and enjoy!
