Creamy Cauliflower Bisque

Ingredients

  • 1 head cauliflower
  • 2 lbs. Hannah yams (or any whitefleshed variety)
  • 6 cups veggie broth or water
  • 1 large sweet onion
  • 8 garlic cloves
  • 2 tablespoons dried dill
  • 2 tablespoons WYW Stardust Salt Substitute
  • 1 tablespoon smoked paprika
  • 1/4 teaspoon chipotle powder
  • 4 tablespoons mustard
  • 4 tablespoons WYW Nooch
  • 3 cups soy milk (adjusting amount needed for desired thickness)

Method

Add the cauliflower, yams, veggie broth, onion, garlic, dill, Stardust Salt Substitute, smoked paprika, and chipotle powder to an 8-quart pressure cooker. Cook on high pressure for 12 minutes, quick release.

Add the Nooch, mustard, and soy milk to the pot. Purée the soup with an immersion blender right in the pot, or carefully transfer to a blender and blend until smooth.
