Oat clusters are the perfect vegan, salt, oil, and sugar free snack! Not only are they delicious they are great to make in batches, so you can always have some on hand. This recipe is amazing for traveling, to take to work, to school, or to events.
You can even freeze these oat clusters to keep them fresh even longer. Having these oat clusters in your kitchen is helpful for whenever you are looking for a healthy SOS free snack. Now let’s get to cooking!
First, grind the flax seeds. Each batch of oat clusters requires a tablespoon of ground flax meal, one banana, one cup of oats, 3-4 dates, ½ teaspoon of cinnamon and vanilla. You can make as many batches as you would like when making this recipe.
Add the ground flax seeds to a mixing bowl and add enough water that you are able to loosely whisk the mixture. Set this bowl aside.
It is time to mash those bananas, using the desired amount for the amount of batches you are making. Mash the bananas by adding them to the food processor along with the dates, the cinnamon and the vanilla. Blend until smooth which is usually about 30 seconds.
If you want to add nuts to the oat clusters, we recommend about a ¼ cup of nuts for each banana. We have used walnuts and almonds for this recipe. This is a completely optional step. Add the nuts to the mashed bananas in the food processor, run pulse a few times until you reach the desired consistency for your oat clusters.
We are almost done with these amazing oat clusters! Place the clusters into the oven at 350° and bake for 20 minutes. Take them out of the oven, flip, and place back into the oven for another 20 minutes.
That is all for this recipe. We hope you enjoy this amazing salt, oil, and sugar free snack. Let us know what you added to your oat clusters. Enjoy!
