Begin this recipe by chopping the potatoes into bite sized pieces. Add them to a pot and boil until they are tender. This step is very important! If you don’t precook the potatoes, they will take quite a long time to soften in the pot with the other ingredients.
Do I need to use mushrooms?
Nope! If you are not a fan of mushrooms or simply don’t have any on hand, you can leave them out and this recipe will still be amazing. Another option would be to sub the mushrooms with rehydrated Soy Curls!

Mushroom Cacciatore
A simple, yet satisfying Italian classic!
Ingredients:
- 1 ½ lbs. red potatoes, chopped bite sized
- 12 oz. mushrooms, quartered
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 1 tablespoon minced garlic
- 2 tablespoons WYW Italian Seasoning
- 1 tablespoon WYW Nooch
- 1 teaspoon dried basil
- ½ teaspoon dried thyme
- ½ teaspoon crushed red pepper (optional)
- 1 bay leaf
- 1 ½ cups WYW Veggie Broth
- 1 15 oz. can diced tomatoes
- 1 15 oz. can chickpeas, rinsed and drained
- 2 tablespoons tomato paste
- fresh chopped parsley, to serve
Instructions:
First, add the potatoes to a pot, cover with water, bring to a boil, reduce the heat, and simmer for about 10 minutes or until fork tender. Drain and set aside
To a large pot or dutch oven, add the mushrooms, onion, bell pepper, and garlic. Sauté over medium-high heat for a few minutes until tender, adding a little water or veggie broth as needed to keep from sticking.
Then, add the last set of ingredients along with the cooked potatoes. Stir well and lightly simmer for 5-20 minutes.
Sprinkle fresh parsley on top and enjoy!
