    Jingle Balls

    These Jingle Balls will definitely replace the lentil loaf on your holiday table.


    Ingredients:

    • 1/2 bunch stemmed kale
    • 5-6 mushrooms, diced
    • 3 celery stalks, chopped small
    • 1 small yellow onion, diced
    • 1.5 tablespoons minced garlic
    • 1/2 teaspoon thyme
    • 1.5 teaspoon rosemary
    • 1 teaspoon oregano
    • 1/3 cup dried cranberries, chopped
    • 1/2 cup oats
    • 1 tablespoon ground flax
    • 1.5 cups cooked lentils
    • 1 cup walnuts
    • 1 tablespoon apple cider vinegar

    Instructions:

    Bake for 45 minutes at 360°. They might need a little longer. They will firm up a bit as they cool.
