Skip the overpriced, oily takeout and instead make this healthy Creamy Peanut Ramen at home in just 10 minutes! You will be shocked at how easy it is to make restaurant quality food at home. Whether you need fast recipes because of your busy schedule or you don't like to cook long recipes, then you need to try this delectable ramen dish!
Wait…healthy ramen?
Yes! Ramen can be healthy if you find the right kind of noodles. We love to use the Lotus Foods Brown Rice and Millet Ramen Noodles. They have the perfect texture and are ready to eat in minutes! These can be found at Costco in a 12 pack or in a smaller package on Amazon. Unlike traditional ramen noodles, these noodles are made from organic rice and millet, so you can feel good about putting them in your body. If you can’t find these, you can use compliant soba, udon, or pasta noodles.
Frozen pre-chopped veggies are perfect for this recipe and can be added to the water with the boiling noodles. We often use broccoli, green bell pepper, and edamame in this recipe, but we encourage you to use your favorite ingredients.

Creamy Peanut Ramen
Better than takeout!
Ingredients:
- Peanut Sauce
- ⅓ cup peanut butter
- OR
- ¼ cup peanut butter + ¼ cup water
- 1 tablespoon soy sauce/tamari
- OR
- 1 tablespoon miso paste
- 2 deglet dates
- OR
- 2 teaspoons WYW Date Powder
- 1 tablespoon lime juice
- 1 tablespoon rice vinegar
- 1” nub fresh ginger root
- 3 garlic cloves
- 1 green onion
- 4-6 tablespoons water
- crushed red pepper or Thai chilis, to taste
- Bowl
- rice ramen
- frozen broccoli
- frozen shelled edamame
- frozen bell pepper
- shredded carrots
- sesame seeds
- WYW Sriracha
Instructions:
To prepare the peanut sauce, add everything to a blender and blend until smooth. This one keeps very well in the fridge so make a double batch!
To prepare the bowl, bring an oversized pot of water to a boil and throw in 1-2 ramen noodle blocks. We love the Lotus Foods brand. Allow these to cook for about 5 minutes, using a fork to break them apart once they start to soften.
Then add some frozen broccoli, bell peppers, and shelled edamame to the water with the ramen noodles. Let this simmer a couple minutes longer, and then strain it out and transfer to a bowl. Toss with peanut sauce and shredded carrots. Sprinkle on some sesame seeds and enjoy!
