BBQ Sweet Potato Sheet Pan
The flavor of shish kabobs without the effort!
Ingredients:
- BBQ Sauce
- ½-1 cup WYW BBQ Sauce
- OR
- ⅔ cup water
- 2 tablespoons tomato paste
- 2 tablespoons apple cider vinegar
- 1 teaspoon paprika
- 1 teaspoon ground mustard
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- ¼ teaspoon white pepper
- ¼ teaspoon liquid smoke
- ⅛ teaspoon ground cinnamon
- ⅛ teaspoon celery seed
- 5 deglet dates
- 2 cloves
- Sheet Pan
- 1 large sweet potato, halved and sliced thin
- ½ red onion, sliced
- ½ head cauliflower, chopped into florets
- 2 cups red cabbage, shredded
- 1 cup frozen fire roasted corn
- ½ cup cherry tomatoes
Instructions:
Preheat the oven to 425°F.
If making the BBQ Sauce, add all of the ingredients to a high-speed blender and blend until smooth.
Add all of the sheet pan ingredients along with as much BBQ Sauce as you like to a large mixing bowl. Toss well and spread on two parchment-lined baking sheets. Bake for about 25 minutes or until the potatoes are cooked through.
Serve over brown rice, quinoa, greens, or anything else you'd like!
