Voodoo Etouffe

Ingredients

  • 1 yellow onion, chopped
  • 1 green bell pepper, chopped
  • 2 ribs celery, chopped
  • 1 15 oz. bag frozen black eyed peas
  • 2 cups frozen chopped okra
  • 1 1/2 cups veggie broth
  • 4 teaspoons WYW Voodoo Cajun Seasoning


To Serve

  • cooked brown rice
  • chopped green onions
  • fresh chopped parsley

Method

Sauté the onion, bell pepper, and celery in a saucepan on medium-high heat until tender, adding splashes of veggie broth or water along the way to prevent sticking.

Add the black eyed peas, okra, veggie broth, and Voodoo to the saucepan. Allow the okra and peas to defrost and become slightly tender.

Serve over brown rice. Top with with green onions and parsley, enjoy!
