Method
Add the onion, garlic, butternut squash, and zucchini to a saucepan and sauté over medium-high heat for a few minutes, adding a little water or veggie broth as needed to keep from sticking.
After a few minutes, add the WYW seasoning blend of your choice along with the ground Aleppo chili. Continue to sauté for a minute or two.
Then, add in the tomatoes and the mint. Sauté for a few more minutes. Stir in the starch(es) and allow it to heat through.
Squeeze on fresh lemon and enjoy!
