Tofu Mayo

  • 1 package firm tofu
  • 2 tablespoons lemon juice
  • 1 teaspoon white wine vinegar
  • 1/2 teaspoon WYW Nooch
  • 1 teaspoon yellow or dijon mustard

Method

Cook the corn according to your preferred method. We like to boil it because it's the fastest! Just bring a pot of water to a boil, drop in the corn, return to a boil, and cook for 4-5 minutes.

Alternatively, bake the corn for 30 minutes in the oven at 400°F, turning them halfway through.

Prepare the tofu mayo by adding all of the ingredients to a small blender and blending until smooth.

To assemble the elote, wait until the corn is cool enough to handle and spread a thin layer of tofu mayo all over it using a spatula or butter knife.

Sprinkle a generous amount of Nooch onto the tofu mayo to cover it completely. Finally, sprinkle on the desired amount of Chili Lime Seasoning. Enjoy!
