Method
Cover the hibiscus flowers with water and soak for at least an hour. Then, pour them through a strainer and rinse well with water to remove any leftover grit.
Add the hibiscus flowers to a sauce pan and cover with filtered water, bring to a boil, reduce the heat, and simmer for 20 minutes.
Turn off the heat and let sit for 20-60 minutes. Next, strain the flowers again, but no need to rinse!
Sauté the onion and garlic until tender, adding water to keep from sticking as needed. Add the Mexican spices and toss in the hibiscus flowers. Continue to sauté until heated through. Kill the heat, squeeze on the lime, give it a stir and you're ready to go!
Chef's Note
Save the simmer water from the hibiscus! This is delicious hibiscus tea. We love it with a little lime and soda water to dilute the tea.
