Green Bean Potato Salad

Ingredients

  • 2 large russet/gold/red potatoes, chopped
  • 1/2 pound green beans, ends trimmed and chopped
  • 1 cup frozen corn
  • 1 cup cherry tomatoes, quartered
  • 1/2 cup fresh basil, chopped
  • 1 15 oz. can white beans, drained and rinsed
  • 1/4-1/2 cups WYW Sweet Mustard Dressing

Method

First, bring a pot of water to a boil. Add the chopped potatoes to the boiling water and allow to simmer for about 5 minutes, or until they are about halfway done.

Then, toss in the green beans and continue cooking for about 3-4 minutes along with the potatoes.

Finally, toss in the frozen corn until thawed. Immediately strain out the water and rinse everything under cold water to stop the cooking process.

Shake dry for 30 seconds. Add the cooked items to a mixing bowl along with the tomatoes, basil, white beans and Sweet Mustard dressing, toss and enjoy!
