Tis’ the holiday season and nothing says the holidays more than the nostalgic flavors you had growing up without sacrificing your healthy lifestyle! Luckily, this No-Turkey Salad does just that because this recipe is completely whole food plant-based as well as salt-free, oil-free, and sugar-free! Not to mention, this salad is amazing on its own, but is perfect for making a classic No-Turkey Salad sandwich!

We are going to begin this recipe by throwing the chickpeas into a large mixing bowl and mashing slightly with a potato masher. We want a nice coarse texture. Then, chop up the green onions, celery, and walnuts and add it to the bowl. Next, we will add the cranberries to the bowl as well. Try to use dried cranberries free of added salt, oil, and sugar. We found a great option on amazon here! We suggest soaking them in boiling water for about 10 minutes to soften them, but it is completely up to you! You can also chop them up a bit or leave them whole!
Let’s make the dressing! In a high speed blender, add the white wine vinegar, tahini, dates, water, and black pepper and blend until smooth. Add a little water along the way until you reach a thick and creamy consistency. Now, pour the dressing into the bowl with the other ingredients and mix well to combine. Add some more black pepper into the bowl and mix again.
While this No-Turkey salad is absolutely delectable on its own, it is even better on a sandwich! Prepare the most amazing sandwich by adding a nice layer of the salad to the bread, add some slices of fresh tomatoes, grind on some black pepper, throw on some slices of red onion, add a few leaves of lettuce, and top with avocado.
