This recipe uses only whole food plant-based vegan ingredients and is completely salt, oil, and sugar free. This meal is a classic recipe here at Well Your World and one of Dillon’s first recipes that he made often when starting out whole food plant-based!

    This recipe is only a few easy steps! The first thing we are going to do is dice up the onion and throw it right into a dutch oven or large pot. No need to preheat the dutch oven! Set it aside, we will get back to it later!


    Next, we are going to prepare the black eyed peas! We used dry black eyed peas that we then soaked and strained. Although, it is not necessary to soak them! Simply add them to a pot, cover with a couple inches of fresh water, bring to a boil, reduce to medium heat, and simmer for about half an hour. We suggest checking after the black eyed peas after about 20 minutes as they may be done especially if you soaked them.

    While the beans are cooking we are going to prepare the other main ingredient…the greens! We opted to use one bunch of kale and one bunch of collard greens. The bags of pre-rinsed bagged greens are great for this recipe too! Now we are going to destem the kale and collard greens, chop them up, add to a large colander, rinse well, and set aside.


    Now, it is time to sauté that onion! Add a couple splashes of veggie broth or water along the way to prevent sticking. Then add in the garlic and stir it up! Throw in the other flavorings like the Well Your World Stardust Salt Substitute,Galaxy Dust Table Blend, and crushed red pepper for that extra kick. Any no-salt seasoning blend will do! We also love to add in some liquid smoke to this dish for even more flavor!

    We are so close to enjoying this delicious meal! Add the greens into the dutch oven with the onion and stir them to get them to wilt. You can also put the lid on the pot which will wilt them quickly. Once the black eyed peas are cooked to your liking, strain out the water, and add them into the pot. Stir everything together so the flavors are evenly distributed.


    Add a couple scoops of the beans and greens to a bowl to serve. For some healthy fat, we love to add half an avocado to our bowl! Then, sprinkle on some black pepper and top with a little Well Your World Sriracha to really take this dish up a notch!

    EZ Beans and Greens

    The name says it all: easy and healthy!


    Ingredients:

    • 2 cups dried black eyed peas
    • 1 yellow onion, diced
    • 2-3 garlic cloves, minced
    • 1 tablespoon favorite no-salt seasoning blend
    • 1 bunch kale, de-stemmed and chopped
    • 1 bunch collard greens, chopped
    • veggie broth

    Instructions:

    Soak the beans for a few hours if you have the time, rinse, and add to a medium saucepan. Cover with a couple inches of water, and bring to a boil. Reduce the heat to medium and simmer for 30 minutes. This works well enough without soaking too, but you'll have to cook the beans a bit longer.

    Add the onion to a separate skillet and sauté over medium-high heat for a few minutes, adding a little water as needed to keep from sticking. Add the garlic, no-salt seasoning blend, and crushed red pepper if using, and sauté for another minute or so.

    Add the greens along with veggie broth and continue to sauté until the greens are wilted, adding more veggie broth along the way as needed.

    Strain the cooked black eyed peas and add them to the sauté pan. Stir it up and you are ready to go! Top with fresh avocado, black pepper, and Well Your World Sriracha for an added boost!
