Perfect CRUNCHY Granola - Weight Loss Friendly

Who doesn’t love snacking on granola or adding it to yogurt and smoothie bowls?! Unfortunately, it’s almost impossible to find a healthy and salt, oil, and sugar free option at the grocery store. That is where we come in! This plant-based and salt, oil, and sugar free granola is so simple to whip up at home and keep on hand for whenever you crave it!
You won’t believe how easy it can be to make nutritious and tasty granola at home! You can also find this recipe in our YouTube Favorites Vol. 1 Cookbook! We love that this recipe is so perfect for adding your own spin and making all kinds of granola! Use this recipe as a template and multiply based on how much you want to make! A double batch of the recipe below will make about one 16 oz. mason jar’s worth of granola. Although, we usually make a 3x or 10x batch that lasts a couple weeks in the fridge or freezer!!
We are going to begin this recipe by grinding up the chia seeds and flax seeds. The easiest way to do this is to use a small bullet blender and shake it while it blends so everything can hit the blades. Grinding the seeds allows for our body to properly digest them. Once they are ground up nicely, set them aside and we will get back to them later.
This next step can be done in two different ways, depending on the ingredients and kitchen gear you have! The first way to do this is by tossing the super ripe bananas and dates into a food processor, squeezing the dates to ensure they’re pitted, and adding to a large bowl. You do not need to completely pulverize the dates, you just want a somewhat smooth texture. The little pieces of dates are like a sweet burst! The other way to complete this step is to combine WYW Date Powder and the bananas together in a large bowl with a potato masher. After everything is mashed well, use a spatula or spoon to mix. If you don’t have Date Powder, you can chop the dates up with a knife!
Now, we are going to add some flavor by throwing the vanilla bean powder and cinnamon in the bowl with the bananas and dates. We usually add these to the food processor because it is easier, but we forgot to when filming. You can also use vanilla extract too, if you have that on hand. This recipe is an amazing blank canvas too. Try adding some cocoa powder for a chocolatey flavor, pumpkin pie spice for a festive fall flavor, peanut butter powder…the possibilities are endless!
Add in the nuts and seeds to the bowl with the other ingredients. We used a mix of pepitas (pumpkin seeds), slivered almonds, and sunflower seeds. You can use your own mix of nuts and seeds or omit it all together for a lower fat option. We are almost done, simply toss in the oats and stir until it is well combined. We used rolled oats, but old fashioned or quick oats will work too.
The next step is to spread the granola into an even layer on a parchment lined baking sheet. You can use a silicone baking mat if you prefer. Additionally, please note if you are making a large batch this will definitely take a few baking sheets. Throw the granola into the oven at 350°F for 20 minutes.
Once the granola has baked for 20 minutes, we are going to break it into smaller pieces. You can let it cool and do it by hand or use your food processor like we did. Ensure you don’t over do it though, we just want to break the granola apart! This might take a couple times depending on your batch size. The easiest way to do this is to pulse a few times, dump into a large bowl, pick out the large pieces, add back to the food processor, and repeat until everything is broken up nicely!
Now that the granola is broken up, it is time for the last step! Spread the granola onto a parchment lined baking sheet again, this will likely take double the amount of baking sheets you started with. Bake at 250°F for another 20 minutes. Don’t worry if your granola is a little soft after baking a second time, once it cools it will get more crunchy. Pour the granola into a container like a mason jar, store, and enjoy when you are ready for some granola! Enjoy on fresh homemade soy yogurt from our cooking show,an acai bowl, oatmeal, or on its own!

Oil-Free Granola
Use this recipe as a template and multiply according to how much you will use!
Ingredients:
- 1 super ripe banana
- 4 deglet dates OR 1 ½ tablespoon WYW Date Powder
- ½ teaspoon vanilla extract or powder
- ½ teaspoon cinnamon
- 1 cup rolled oats
- ¼ cup nuts and seeds (ie. almonds, pepitas, sunflower seeds)
- 2 teaspoons ground flax meal or ground chia seeds
Instructions:
Preheat the oven to 350°F.
Add the banana, dates, vanilla, and cinnamon to the food processor and process until smooth. If using Date Power, add these ingredients to a large mixing bowl and mash well with a potato masher.
Add the remaining ingredients along with the banana mixture to a large mixing bowl and stir well. Spread the mixture evenly onto a parchment-lined baking sheet and bake for 20 minutes at 350°F. Remove, then reduce the oven temperature to 250°F.
At this stage, the granola will come out like one big block. Tear off a few chunks and pulse them in your food processor to break them back up into something resembling granola. You can do this in small batches. Alternatively, you can let it cool a bit and use your hands to break it up. Then, spread the granola out on double the number of baking sheets as you started with. We want it to have enough space to dry out. Place it back in the 250° oven for another 20 minutes. Remove and allow to cool. As it cools, it will dry out even more, so don’t aim for it to come out of the oven totally dried out or crunchy.
Enjoy like cereal with some plant milk or top a bowl of fruit or yogurt with this granola!
