Mushroom Sweet Potato Burger

Ingredients

  • 1/2 red onion, chopped
  • 3 garlic cloves, minced
  • 1/2 pound mushrooms, chopped
  • 2 cups cooked sweet potato (about 2 potatoes)
  • 1 tablespoon WYW Galaxy Dust
  • 1/2 cup cooked green/brown lentils
  • 2-3 cups oats
  • WYW Tomato Ketchup

Method

Sauté the onion, garlic, and mushrooms for 3-5 minutes over medium high heat, cooking off as much water as possible to ensure the burgers don't get soggy. The mushrooms should give off water, so you won't have to add much. Add the Galaxy Dust during the last minute on the stove.

Peel the skins off the sweet potatoes and slice up or mash in a large bowl. Add the lentils, oats, and mushroom and onion mixture. Mash well and stir to combine.

Form patties by scooping a ball into your hand and pressing down on a hot non-stick griddle (makes about 6).

Top with your favorite toppings and WYW Ketchup!
