Our Top 5 Quick And Easy InstantPot Meals

It’s time for another one of our Top 5 videos! Today we’re talking about our favorite InstantPot meals. If you own an InstantPot, chances are you’re completely obsessed with it like we are. The InstantPot is the closest thing we vegans have to “set it and forget it”. Once you get past the slight learning curve and discover the time-saving magic of this gadget, you’ll wonder how you ever got on in the kitchen without it. Was there even life before InstantPot? The jury is still out on that one and while they’re deliberating, let’s get into our favorite ways to use this little miracle-maker.
#1 - TikTok "Feta" Pasta
When we got on TikTok we started to get ideas for making healthy vegan versions of some of the popular food trends. One of the trends we kept seeing was a “Baked Feta” recipe. Obviously, we don’t eat dairy so real feta wasn’t in the cards for us but I remembered coming across recipes for a vegan feta dupe made out of tofu. On a whim, we threw some of the ingredients from those videos into the InstantPot, pushed a button, filmed it, and WHAM-O! We received some crazy-good feedback from our Facebook community.
#2 - Starch Blaster
The dish that made Dillon a YouTube star (not really lol) is Starch Blaster. Not really a dish, more like a formulator for fast, easy, zero-thought-involved cooking during times of acute pain at the thought of having to cook. If you’ve followed us for any length of time, you will have heard us mention Starch Blaster on multiple occasions. It’s one of those things we make all the time because it’s filling and packs in every bit of nutrition we need when we just want something yummy without a ton of effort. Just throw everything into the InstantPot, push a button, and go do other stuff until the beep tells you dinner is ready. #3 - Refried Beans
We created a whole video and blog post about our epic vegan nachos. We went ALL out and the success of our nacho bar did hinge on the delicious refried beans we make weekly in the InstantPot. It’s no secret that Dillon and I LOVE Latin-inspired food and no Latin dish seems complete without a heaping side of Refried Beans. Some people would say that Refried Beans don’t count as an InstantPot “meal” but there have been many nights when it was my entire meal (or the center of it at the very least). Therefore, we’ve put it in this list of InstantPot meals and stand by the decision! It couldn’t be easier: cook dry beans in the InstantPot, season with your favorite Latin blend of herbs and spices, such as WYW Fiesta Fire Blend, and blend with an immersion blender. That’s all there is to it!
#4 - Tofu Scramble
Did you know that tofu scramble isn’t just for the stovetop anymore? That’s right! You can actually make it in the InstantPot and it couldn’t be easier. We like to use a bag of frozen spinach and a bag of peppers and onions we get from Trader Joes. Pour the bags in, add some scramble spices and a block of tofu then push the button and come back to a delicious, filling breakfast. We absolutely love this for making breakfast tacos… such a treat! #5 - Hoppin John
Black-eyed peas are most often used on January 1 as part of the traditional New Years Day meal that’s supposed to bring you luck all year. Well yes, we do want luck all year but we also want to enjoy black-eyed peas all year too! And it’s easy to do so because this Hoppin’ John recipe is the easiest one ever. It’s another one of those recipes that rely on frozen veggies you just pour in the InstantPot and forget about until the beep. It’s especially wonderful with a little bit of our WYW Desert Catalina dressing mixed in!
Bonus Recipe #1 - Butternut Red Lentil Dahl
Another gift of the Well Your Weekend Cooking Show was from Episode 62 when we made a gorgeous Butternut Red Lentil Dahl.This recipe was featured in our Well Your Weekend live cooking show... Filled with fragrant Indian spices, veggies, and starchy butternut squash that breaks down during cooking and makes the dahl extra-creamy; this is a true delight. Serve it on a bed of basmati rice with a little fresh chopped cilantro sprinkled on top and you might think you’re actually at an Indian restaurant. It is SO good and comforting to eat.
