This is probably the EASIEST ever Hoppin John recipe because it's dump-and-go, and there's no chopping required. This oil-free vegan recipe can and should be enjoyed all throughout January and any time of year!

Hoppin’ John
This will bring you luck in the New Year simply by saving you time in the kitchen!
Ingredients:
- 2 cups black eyed peas
- 1 cup rice
- 1 bags Trader Joe’s Fire Roasted Peppers & Onions
- 2 T minced garlic
- 1-2 can diced green chiles/ 2 jalapeños
- 2 t paprika
- 2 t crushed red pepper
- 2 t cumin
- 2 t onion powder
- 2 t oregano
- 2 t thyme
- 2 15oz cans diced tomatoes
- 1 bag chopped collards/kale
- 3 cups water/veggie broth
Instructions:
Add all of the ingredients to a pressure cooker and set it on manual for 25 minutes. Let it naturally release, mix in the greens, and serve.
