Enjoy a satisfying, healthy plant-based Potato Corn Chowder that only takes 10 minutes to prepare. But don’t worry this soup is full of flavor and you will forget that it took little effort to whip up! Whether you are having a super busy night or just want a simple meal that will fill you up, then you are in the right place!
Put the cutting board away, this is a no chop recipe!
What makes this recipe so amazing is that all you need to do is add the ingredients to a large pot or dutch oven and heat it up! We use frozen chopped veggies and potatoes to make this soup. If you do not have the prepackaged frozen ingredients in your area, you can make your own versions at home to store in your freezer for quick and easy cooking. Or if you prefer to use fresh ingredients, that works too!
We love using frozen mirepoix mix in this recipe. The mix includes chopped onions, carrots, and celery. Sometimes we use the frozen seasoning blend instead which includes chopped onions, celery, red pepper, green pepper, and parsley. Any frozen veggie blend will work great for in this chowder.
The possibilities with this chowder are endless!
Change the seasonings and veggies up when you make this dish for a new version every time! For a Mexican flair, add jalapeños, cilantro, and Fiesta Blend. Or enjoy a bright version by adding Zesty or Lemon Pepper Pizzazz.

Potato Corn Chowder
No chopping required!
Ingredients:
- 4 cups veggie broth
- 2 cups soy milk
- 1 10-12 oz. bag frozen mirepoix mix (diced carrots, celery, and onion)
- 1 28 oz. bag frozen Potatoes O’ Brien (cubed potatoes)
- 1 ½ cups frozen or canned corn
- ¼ cup Nooch
- 1 tablespoon garlic powder
- 2 teaspoons dried parsley
- 2 teaspoons dried chives
- 1 teaspoon dried tarragon
- ½ teaspoon paprika
Instructions:
Add all of the ingredients to a big soup pot, heat to a boil, reduce the heat and let simmer for a few minutes and enjoy!
You can cook this one for 5 minutes or 30 minutes, it doesn't matter. Feel free to swap any ingredient or flavoring with whatever you like. The point here is the process–so, so simple!
