One Pot Green Beans & Potatoes
Make it a side or a main!
Ingredients:
- 1 yellow onion, diced small
- 4 garlic cloves, minced
- 1 teaspoon dried parsley
- 1 teaspoon onion powder
- ½ teaspoon mustard powder
- ¼ teaspoon dried dill
- ¼ teaspoon smoked paprika
- 1 tablespoon fresh chives, chopped or 1 teaspoon dried
- 2 teaspoons Nooch
- 2+ cups veggie broth
- 1 tablespoon dijon mustard
- black pepper, to taste
- 1 tablespoon apple cider vinegar
- 1 lb. red or gold potatoes, chunked
- 1 lb. fresh green beans, ends removed
- 1 15 oz. can white beans, drained and rinsed
- ¼ cup fresh parsley, chopped
Instructions:
In a pot, sauté the onion for a few minutes over medium-high heat, adding veggie broth as needed to keep from sticking. Add the garlic and cook for another minute.
Next, add the other ingredients up to and including the apple cider vinegar. Stir to combine and continue to sauté.
Add the potatoes and green beans, making sure they are completely covered by broth, adding more broth if necessary. Cover the pot and cook the potatoes and green beans for about 15-20 minutes or until the potatoes are tender.
Next, stir in the white beans and cook for a couple more minutes to heat through.
Top with fresh parsley, serve, and enjoy!
