Step aside P.F. Chang’s! We have the best and healthiest Curried Chickpea Lettuce Cup recipe that only takes 10 minutes to prepare AND cook! Since this recipe is completely vegan, whole food plant-based, and salt, oil, and sugar free you won’t feel weighed down by all the added junk you would typically find in lettuce cups! Additionally, you can even use this recipe as a blank canvas to add a Latin, Italian, Cajun, or Caribbean spin!
For these lettuce cups, you will only need a handful of ingredients that you likely already have ready to go in your kitchen! We first debuted this recipe on our 10 Minute Meals episode of our LIVE Cooking Show! If you are not yet a member, you can learn more and sign up here!
We are going to begin with just a little bit of chopping! Chop the green onion and the mint leaves and set them aside. Next, we are going to head to the stove! In a preheated pan or skillet, add a couple splashes of water or veggie stock. Immediately after adding the liquid, throw in the chickpeas, turmeric, cumin, chili powder, and curry powder. Stir the mixture together to evenly coat the chickpeas, adding a little liquid as necessary to prevent sticking.
While we did use curry powder to make these lettuce cups in an Indian style, you can prepare this recipe in so many different ways! Some great options to change up this recipe include the Well Your World Spice Blends like Chili Lime or Fiesta Fire Blend for a Latin flavor, Voodoo for a cajun flavor, Lemon Pepper Pizzazz, or any of our other spice blends and sauces!
Once the chickpea mixture begins to thicken up, we are going to toss in the garlic, green onion, mint, and sesame seeds. You can use white or black sesame seeds, we just love how much the black sesame seeds make the colors pop! Stir the mixture well for about a minute and remove from the heat.
It is almost time to chow down! Carefully peel off the leaves (try to keep them whole) from the lettuce. We found that butter lettuce works best for this, but any lettuce will do! Make sure to rinse and spin the lettuce. We are now going to put these lettuce cups together! Scoop some of the chickpea mixture onto one of the lettuce leaves and top with avocado for extra pizzazz!

Ingredients:
- 1 15 oz can chickpeas, drained and rinsed
- 1 teaspoon turmeric
- 1 teaspoon ground cumin
- ½ teaspoon ground chili powder
- 1 teaspoon curry powder
- 1 green onion, chopped
- 3 garlic cloves, minced
- 6-8 mint leaves, chopped
- 1 tablespoon sesame seeds
- lettuce, to serve
- avocado, to serve
Instructions:
Heat up a skillet on the stove and add a few tablespoons of water along with the chickpeas, turmeric, cumin, chili powder, and curry powder. Stir together to coat the chickpeas well as the water evaporates.
Once the water has mostly cooked off, add the green onion, garlic, mint, and sesame seeds and stir for about a minute. Turn off the heat and set aside.
To serve, spoon some of the chickpea mixture onto the lettuce cup and top with avocado. Enjoy!
