Sheet Pan Burger

Ingredients

  • 1 15 oz. can black beans, drained and rinsed
  • 2 cups rolled oats
  • 1/2 green bell pepper, diced
  • 1/4 yellow onion, diced
  • 2 mushrooms, chopped
  • 1 cup soy milk
  • 1/4 cup Nooch
  • 1/4 cup Ketchup
  • 1 tablespoon yellow mustard
  • 1 teaspoon liquid smoke
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)

Method

Preheat the oven to 400°F.

Add the black beans to a large mixing bowl. Use a potato masher to mash the beans into a coarse texture. Add the remaining ingredients and mix well.

Transfer the mixture to a parchment-lined glass baking dish with sides (~9" x 9") and spread into an even layer. The sides are important to give the burger structure during baking.

Bake for 20-25 minutes until firm. Remove from the oven and place a parchment-lined sheet pan upside down over the baking dish. Carefully flip both together so the burger transfers to the sheet pan without breaking apart.

If you are making it cheeseburger-style, spread an even layer of Cheese Sauce on top.

Place the sheet pan in the oven and bake for an additional 10 minutes. 

Let cool for another 10 minutes to allow the center to firm up and set properly. Once cooled, slice or crumble as desired for burgers, wraps, salads, or nourish bowls. Enjoy!
