Creamy Chickpea Salad

Ingredients

Dressing

  • 1/2 cup raw cashews
  • 1/2 cup water
  • 3 tablespoons lemon juice
  • 2 tablespoons mustard
  • 2 teaspoons apple cider vinegar
  • 1 teaspoon curry powder, WYW Indian, Calypso, or Zesty Seasoning Blend
  • 3-4 garlic cloves


Salad

  • 2 15 oz. cans of chickpeas, rinsed
  • 3 ribs celery, chopped
  • 1/2 medium red onion, diced
  • 1 pint of cherry tomatoes, quartered
  • black pepper, to taste

Method

Place all of the dressing ingredients into a high-speed blender and blend until smooth. You can swap the curry powder for any of the Well Your World seasoning blends like Indian, Calypso, or Zesty to change it up from time to time.

Mash the chickpeas with a potato masher in a large mixing bowl, leaving a chunky texture.

Throw in the celery, onion, cherry tomatoes, and dressing, and stir thoroughly.

Grind on some black pepper to taste. Enjoy on its own, a bed of greens, in a sandwich, or in a wrap!
