• You normally don’t think of taquitos as a healthy meal, but these plant based and oil free Sweet Potato Taquitos will change your mind! The combination of sweet potatoes and black beans are the perfect balance of sweet and savory. Enjoy the crunch of the baked tortillas without all the grease that is normally in taquitos. Give this recipe a try and you will have a new favorite snack or meal!


    This recipe is so simple to make! All you need are some cooked sweet potatoes, black beans, cilantro, onion, and a few spices. If you already have cooked sweet potatoes or frozen cubed sweet potatoes, then this recipe will be even easier. Mash the cooked sweet potatoes in a mixing bowl along with the spices. You can even use our Fiesta Blend in place of the spices! Then add the remaining ingredients and mix well. That is all it takes to make this taquito filling!

    What if I don’t have sweet potatoes?


    Get creative and use this recipe as a blank canvas! In the video we made taquitos with leftovers in our fridge. We used some tamale pie filling as well as rice and beans that we already had on hand to make a delicious taquito. In a past video, we made an Indian version with Samosa Taqutios. The taquito possibilities are endless!

    For the least amount of splitting in the tortillas, we highly recommend warming them prior to rolling the taquitos. We chose to warm them in our microwave tortilla warmer, but you can also put them in the oven for a minute or two. Then add a spoonful of your filling onto the tortilla, roll it up, and place face down on a parchment-lined baking sheet.

    While they are in the oven, we decided to make a fast latin cheese sauce to dip our taquitos in using WYW Cheese Sauce Mix. All we did was add the mix along with some water and cashews to the blender. For a latin flair, we always add a dried chili or a chili in adobo sauce to the blender. If spice isn’t your thing, you can always leave it out and have a delicious cheese sauce.

    When your taquitos are out of the oven, you might notice that some of the tortillas split. But there is no need to worry about split tortillas because you still have a healthy and delicious meal! We dipped ours in the Latin cheese sauce, but other options include salsa, guacamole, and pico!

    Sweet Potato Taquitos

    A crunchy taquito with a delectable combination of sweet and savory!


    Ingredients:

    • 1-2 medium sweet potatoes, peeled and chunked
    • ½ lime, juiced
    • ½ cup soy milk
    • ¼ cup WYW Nutritional Yeast

     

    • 1 teaspoon ground cumin
    • 1 tablespoon garlic powder
    • OR
    • 1-2 tablespoons WYW Fiesta Blend

     

    • ½ red onion, diced small
    • ½ bunch fresh cilantro, chopped
    • 1 15 oz. black beans, drained and rinsed
    • corn tortillas

    Instructions:

    Preheat the oven to 425°F.

    Cook the sweet potatoes in the pressure cooker on high pressure with a trivet and one cup of water for 10 minutes (or steam them on the stove until done).

    Add the sweet potatoes, lime juice, soy milk, nutritional yeast, cumin, and garlic powder to a large bowl, and mash well with a potato masher.

    Add the red onion, cilantro, and black beans and mix well. Using a spoon, dollop a bit of mix onto the center of each tortilla. Roll the tortilla and place on a parchment-lined baking sheet with the flap face-down, so they don't unroll.

    Bake for 30 minutes, flipping halfway.

    Serve with WYW Cheese Sauce, Pico de Gallo, or Guacamole.
