Shiitake Mushroom Salsa

Ingredients

  • 4 oz. shiitake mushrooms
  • 1 shallot, minced
  • 1/2 lime, juiced
  • 1/4 cup balsamic vinegar
  • 1 teaspoon minced garlic
  • 1/2 teaspoon fresh thyme, minced
  • 1/4 teaspoon dried oregano
  • 1 tablespoon fresh cilantro, chopped
  • crushed red pepper, to taste

Method

Preheat the oven to 500°F.

Place the mushrooms on a parchment lined baking sheet and bake for 5 minutes. Remove the mushrooms from the oven and dice.

Add the roasted mushrooms along with the remaining ingredients to a large mixing bowl. Stir well to combine.
