Potato Corn Chowder

Ingredients

  • 1 10-12 oz. bag frozen mirepoix mix (diced carrots, celery, and onion)
  • 1 28 oz. bag frozen Potatoes O’ Brien (cubed potatoes)
  • 4 cups veggie broth
  • 2 cups soy milk
  • 1 1/2 cups frozen or canned corn
  • 1/4 cup Nooch
  • 1 tablespoon garlic powder
  • 2 teaspoons dried parsley
  • 2 teaspoons dried chives
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon paprika

Method

Add all of the ingredients to a big soup pot, heat to a boil, reduce the heat and let simmer for a few minutes and enjoy!

You can cook this one for 5 minutes or 30 minutes, it doesn't matter. Feel free to swap any ingredient or flavoring with whatever you like. The point here is the process–so, so simple!
