Ingredients

  • 2 15 oz. cans black eyed peas, drained and rinsed
  • 2 ribs celery, diced
  • 1 bell pepper, diced
  • 1 carrot, shredded or finely chopped
  • 1/2 red onion, diced
  • 1/2 cup WYW Desert Catalina Dressing
  • fresh greens, to serve
