Fajita Sheet Pan

Ingredients

  • 2 red bell pepper, sliced into strips
  • 1 red onion, sliced into strips
  • ½ lb mushrooms, sliced
  • 1 can chickpeas, drained and rinsed
  • 1 head cauliflower, cut into florets
  • 1 jalapeño, diced (optional)
  • 1-2 tablespoon of your favorite Mexican spice blend

Method

This one is so easy! Just add literally all of the ingredients to a mixing bowl and toss well. Spread evenly on a 1 or 2 parchment-lined backing sheets and bake at 400°F for 20 minutes.

Serve with corn tortillas, and your favorite sauce such as guacamole or salsa or both! This one is so good with our Refried Beans from our Nacho YouTube Video (search Well Your World nachos on YouTube for this recipe).
