Easy Side Salad

Ingredients

  • 4-6 cups fresh greens, chopped
  • 1/2 cucumber, sliced into half moons
  • 1/4 red onion, sliced thin
  • 1 cup chickpeas or white beans
  • 1 cup cherry tomatoes, halved
  • WYW Italian Dressing or Balsamic Vinaigrette, to taste


To Serve

Method

Add all of the salad ingredients to a large mixing bowl and drizzle the dressing on top. Toss well to evenly coat everything, adding more dressing if needed. 

To serve, sprinkle cashew parmesan on top. Enjoy!
