Method
Cook the pasta according to the package directions. Add the chopped artichokes and spinach during the final minute of cooking. Strain, but reserve about a cup of pasta water, and set aside.
Add the remaining ingredients to a large mixing bowl along with pasta, spinach, artichokes, and pasta water. Toss well until everything is evenly coated.
Sprinkle the cashew parmesan on top to serve and enjoy!
