    The key to creating a delicious soup is choosing items from each of these 7 categories:


    1. Mirepoix and Garlic

    2. Broth/Water

    3. Grain/Starch

    4. Spices

    5. Fresh/Dried Herbs

    6. Additional Fresh Veggies

    7. Acid (optional)


    For this Artsoppa Yellow Split Pea Soup we will begin by chopping the celery, onion, and carrots for the mirepoix. Add the mirepoix to a large pot or dutch oven along with the minced garlic. Sauté the mirepoix and garlic until tender, adding veggie stock as needed to prevent sticking. This step is not necessary if you are using a quinoa, cooked rice, or any lighter starch.


    Next up is adding the veggie stock and water to the soup for the base. Keep in mind you can always add more liquid later if needed, so don’t add too much!

    It is time for the most important category adding the grain or starch to the pot! For this recipe it is important to soak the yellow split peas overnight. We added bay leaves to the pot now so the flavor has more time to develop and allowed the soup to cook for 20 minutes.


    The next two categories are spices and herbs which we are going to add at the same time. We added caraway seeds, fresh thyme, and mustard to the soup. This Artsoppa does not require additional veggies, but now is the perfect time to veggies when using the formulator. Adding the vegetables now instead of at the beginning prevents them from becoming mushy and falling apart.

    We allowed the soup to cook for an additional 90 minutes to allow the split peas to become tender and removed the bay leaves.


    The last category is to add an acid to your soup, which is entirely optional! It is important to add the acid at the end so the flavor does not cook off. For this soup we opted to use a freshly juiced lemon. Other great options for acids are our Stardust Salt Substitute, Lemon Pepper Pizzazz, or Zesty Seasoning Blend!
