Romantic 3 Course Vegan Valentine's Day Dinner | Oil Free

Love is in the air, and they say the key to a person's heart is through their stomach. Well, these Valentine's Day recipes are sure to impress, but not only are they tasty, they're healthy too! We did a Heart Beet Salad, Hearty Stuffed Tomatoes, and a Chocolate Hummus for this one!

Truth be told, there isn’t really anything special or extraordinary about this plant-based meal. We just took some delicious and healthy vegan recipes and romanticized them with hearts! Picking red fruits and vegetables can help keep with the romantic theme too. You can do any sort of dips into “shapes” like a heart with a piping bag. And you can get creative with fruits and veggies too!

Heart Beet Salad

The dressing for this salad is SO delicious, you’ll be making it often!


Ingredients:

  • Dressing
  • 1-1/4 cups grapefruit juice
  • 1 avocado
  • 1/4 cup golden raisins
  • 1 tablespoon minced garlic

  • Salad
  • 4 cups greens (arugula, spring mix, etc.)
  • 1/4 red onion, sliced
  • 1 cup edamame
  • 1 cup cooked beets, sliced

Instructions:

To make the dressing, put all of the ingredients into a high-speed blender or magic bullet and mix well.

Arrange salad on each plate and top with dressing in the middle.

If feeling romantic, cut out a heart from a beet on the center of the salad!.

Hearty Stuffed Tomatoes

Nothing says I love you like a casserole!


Ingredients:

  • 6 large tomatoes (beefsteak, heirloom, on-the-vine)
  • 2 shallots, diced small
  • 4-5 mushrooms, chopped
  • 3 cups cooked wild rice
  • 2-3 cups kale, chopped
  • 1 tablespoons Italian seasoning
  • 1 teaspoon paprika
  • 1 teaspoon marjoram
  • 1/2 -1 teaspoon cumin
  • 6 cherry tomatoes, for garnish

Instructions:

Preheat the oven to 425 degrees.

Cut the tops off of the tomatoes, and use a melon baller or a spoon to scoop out the insides. Save the guts!

Add the tomato guts to a blender and blend until smooth.

In a pan, add the mushrooms and shallots and cook on medium high until tender. Add the tomato mix and spices. Turn down the heat and stir in the kale and cover with a lid to steam for a couple minutes.

Stuff the tomatoes, and place in a high baking dish. Any extra stuffing can be placed around the sides/bottom of the pan.

Cover and bake for 1 hour to 1 hour and 1 5 minutes.

To serve, cut the bottom half of a cherry tomato on an angle. Then cut in half lengthwise. Arrange these in the center of your tomatoes like hearts!

Brownie Batter Hummus

Finally, a delicious dessert that is actually GOOD for you!


Ingredients:

  • 1 can garbanzo beans, drained and rinsed
  • 1 tablespoon tahini
  • 1/2 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 10 dates, soaked
  • 1/4 cup cocoa powder (or carob)
  • 1/4 cup soymilk

Instructions:

Blend all ingredients together in a food processor.

Use a zip lock bag or piping bag to get decorative!

Serve with fruit.
