    Crunchy, creamy perfection!


    Ingredients:

    • Dressing
    • ½ cup raw cashews or extra-firm tofu
    • ¼ cup water + more as needed
    • 1 tablespoon apple cider vinegar
    • ¼ teaspoon mild chili powder or paprika
    • ¼ teaspoon garlic powder
    • ¼ teaspoon onion powder
    • ¼ teaspoon ground cumin
    • black pepper, to taste
    • 1 lemon or lime, juiced

    • Salad
    • 2 cups frozen char-roasted corn, thawed
    • OR
    • 2 15 oz. cans corn, drained

    • 1 jalapeño or mild chili pepper, diced
    • 1 handful fresh cilantro, chopped
    • ½ small red onion, diced
    • ⅓ cucumber, diced
    • ¼ jicama, peeled and diced

    Instructions:

    To prepare the dressing, add all the ingredients to a high speed blender and blend until smooth. It is a good idea to add the water gradually, just enough to allow the blender to operate smoothly.

    Add all the salad ingredients to a large mixing bowl and gradually add the dressing to reach your desired sauciness. Toss to combine.
