You can make these salads in large batches, refrigerate, and enjoy throughout the week. These are not your typical leafy green salads, but you can always add them to a bed of greens if you would prefer. So without further ado here are our top 5 salads.
#1 - Chickpea Salad
Ah yes…chickpea salad a delicious, versatile, yet simple classic. We have been making chickpea salads for years. It is a great addition to any meal or simply on its own and keeps amazing in the fridge. Chickpea salad has all the creaminess without the dairy. You can even thin it out to make your own hummus dip. #2 - Lentil Mango Salad
If sweet and savory is your thing, then this lentil mango salad is for you. We love this salad because of the mixture of raw and cooked textures–like a starch and fruit. The mango adds a delicious sweetness to the salad unlike any other.
