    Ah yes…chickpea salad a delicious, versatile, yet simple classic. We have been making chickpea salads for years. It is a great addition to any meal or simply on its own and keeps amazing in the fridge. Chickpea salad has all the creaminess without the dairy. You can even thin it out to make your own hummus dip. Did we mention this salad is great to take with you on trips, to school, work, and much more!

    #2 - Lentil Mango Salad


    If sweet and savory is your thing, then this lentil mango salad is for you. We love this salad because of the mixture of raw and cooked textures–like a starch and fruit. The mango adds a delicious sweetness to the salad unlike any other.

    #3 - Roasted Asparagus Salad


    Asparagus isn’t your thing? Don’t sweat it, you can always sub the asparagus for green beans. This recipe pairs great with a starch like rice. You can eat this salad hot or cold, so no need to worry about finding a microwave when you are on the go! All this salad needs is a simple sauce with balsamic vinegar, garlic powder, oregano, and lemon juice. To make this a starchy salad with a mediterranean vibe just add a can of rinsed chickpeas.

    If you are like us and need starch motivation to eat your greens then this is the salad for you! This recipe is great as you can refrigerate the falafel separately from the greens and it keeps amazingly well.
