Healthy Veganized TikTok TORTILLA Hack!

If you didn’t know, we recently started a TikTok for our channel… which had me checking out the TikTok “homepage” to see what all the buzz was about. To be honest, I had seen this #tortillahack trend already infiltrating my YouTube homepage, and Instagram. So I went on TikTok to see if I could find examples of what this was all about.
Apparently this hack went viral as a genius way to fold a circular tortilla three times to make a triangle, which could then be grilled up in a pan or a panini press. What the internet loves about this hack is the fact that the tortilla never gets overstuffed, it can easily be crisped up, and that every single bite has an ingredient from all four quadrants.
Most of these #tortillatrends online aren’t very healthy. They are made with SAD ingredients, cheese being the main binder for most of them. While doing my TikTok research, it seemed like many of the vegan ones weren’t healthy either. They weren’t making these with whole food plant based ingredients. They were making them with processed foods, canned ingredients, and oily vegan cheese knock offs.
When I showed this idea to Dill I told him, you know, not only could we make a couple of healthy versions of this, but we could also MAKE our own tortilla. He was in.
Now, there’s nothing wrong with buying a store-bought tortilla. The only problem is, it’s hard to find healthy ones that both use whole grain AND are oil free. To add another element of difficulty, I don’t eat gluten, so finding something that checks all three of those requirements is a nightmare.
Dillon absolutely loves the whole wheat lavash you can buy at Trader Joes. Those are actually rectangular in shape, but could still work with this hack. It actually doesn’t need to be a circle to do the flippity do dah. The problem with the lavash is the gluten for me, but it also seems like different Trader Joe’s around the country vary with the ingredients in their whole wheat lavash. I’ve had so many people comment in the Facebook group, Instagram, and on YouTube that the Trader Joe’s in their area carries the whole wheat lavash but has oil in it. I don’t know what is causing this discrepancy around the nation, perhaps different providers, but we needn’t worry about that when we can just make our own healthy tortillas now!
We took this TikTok tortilla challenge to the next level with our homemade healthy tortilla and tried it 3 different ways. We made a Latin version with Dillon’s favorite: pico! We also made a fancy version with sauteed peppers and onions, mushrooms, sun dried tomatoes, zucchini, and hummus. We made a sweet version too complete with bananas, strawberries, and homemade chia seed jam. Check out the video to see if this trend really lives up to all the hype! Lentil Tortillas
These are so easy to make and they’re whole-food and gluten-free.
Ingredients:
- 2 cups filtered water
- 1 cup red lentils
Instructions:
Soak the red lentils in the filtered water for at least 3 hours or overnight.
When the lentils are done soaking, add the lentils and water to a high speed blender and blend until smooth.
Set your electric griddle to 350°. If you don’t have an electric griddle, you can try a non-stick pan on medium heat.
Using your electric griddle or non-stick pan, spoon a little of the lentil mixture onto the hot surface and swirl it around until it forms a large circle. Use a spatula to get underneath the tortilla and flip in after a few minutes. They cook pretty fast!
