Patatas Bravas is an amazing and tasty dish that is unique to Spain! Traditionally this dish uses a large amount of oil, especially to make the potatoes crispy. Fortunately, we found a way to recreate the delicious flavors and crispy potatoes while being completely salt, oil, and sugar free and only using whole food plant based ingredients!
Get ready to make one of your new favorite potato dishes! The sauce for these potatoes is so good you will want to make a double batch and add it to everything. And this recipe is straight out of our cookbook, Well Your World Favorites!
For this recipe, we are going to prepare the potatoes first! You can use more or less potatoes, it is really up to you! Scrub the potatoes well in the sink and chop into bite size pieces. It is not necessary to peel the potatoes unless you prefer them peeled!
Throw the chopped potatoes into a pot and cover with about two inches of water. Bring the potatoes to a boil and boil for about 8-10 minutes or until tender. Once the potatoes have become tender, remove from the heat and strain out the water. Then, add the potatoes to a large mixing bowl.
Let’s flavor these taters! In the mixing bowl, add the onion powder, garlic powder, and paprika. If you don’t have paprika or don’t like it you can always use your favorite spice blend! Toss the potatoes and the seasoning to ensure everything is nicely coated!
Pour the potatoes onto the air fryer basket and use your hands to spread them into a single layer. Place the basket into the air fryer at 400°F for 25-30 minutes. Potato Hack: For even the crispiest potatoes, try the twice baked potato method! After the potatoes have been boiled, simply refrigerate overnight before air frying!
It is time to sauce it up! To make this sauce we are going to need to do a little bit of chopping. First, chop the bell peppers, tomatoes, onion, and garlic and throw them into a saucepan. No need to perfectly chop everything as this is a blended sauce.
On the stove, sauté the veggies by adding a couple splashes of water or veggie broth along the way to prevent it from sticking. Then we will give this sauce some flavor by adding the black pepper, chipotle powder, and paprika. Once all the veggies are nice and tender, remove the pan from the heat. A little liquid leftover is totally fine!
Next up, scoop the sautéd veggies into the canister of a high speed blender. To make this sauce nice and creamy we are going to use some tofu! If you do not have tofu, white beans or cashews are great options too. Take about a quarter of the block of tofu and throw it in the blender along with the white vinegar. Any tofu you have on hand will do the trick! We also recommend drying the sauté pan out as much as possible to allow for a thicker sauce. We made the mistake of leaving too much water, which made the sauce very thin.
Blend the sauce for about 30 seconds. If your sauce is watery like ours was…you can easily fix this! Add the sauce to a saucepan and simmer on low. This step not only thickens the sauce but it also gives the most amazing flavor boost, so it is worth a try even if your sauce is not watery! Once the sauce is ready and the potatoes are done air frying, we can put it all together!
Let’s put this delicious dish together! Scoop some of the potatoes into a bowl, add a couple spoonfuls of sauce, and top with the fresh parsley! You might want to make a double batch of sauce as it is so delicious and can be used in multiple ways. Throw this sauce on pasta, rice, salads, and more!

The best sauce and potato combo!
Ingredients:
- Potatoes
- ~3 pounds russet potatoes, or more
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- 1 teaspoon smoked paprika
- flat Italian parsley, to garnish
- Sauce
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1-2 medium tomatoes, diced
- 1 yellow onion, chopped
- 3-4 garlic cloves, chopped
- ½ teaspoon blacck pepper
- 1 teaspoon chipotle powder
- ½ teaspoon smoked paprika
- ¼ block tofu (any kind)
- 2 teaspoons white vinegar
Instructions:
First, chop the potatoes into bite-sized pieces and place in a pot. Cover the potatoes with water and boil until tender, about 8-12 minutes depending on the size. Try not to over cook them! Remove from the heat and strain out the water.
Next, throw the potatoes in a large mixing bowl, add all the spices for the potatoes, and toss to coat. Spread the potatoes into a single layer in the air fryer basket and air fry at 400°F for 25-30 minutes or until crispy.
To prepare the sauce, add the peppers, tomatoes, onion, and garlic to a pan and sauté over medium-high heat for 3-5 minutes, adding a couple splashes of water along their way to keep from sticking. Then, add the black pepper, chipotle powder, and paprika and stir. Sauté for a few more minutes, until the vegetables are tender.
Add the contents of the pan to a blender along with the tofu and vinegar. Blend for about 30 seconds or until smooth. If your sauce seems a little watery and you want it to be thicker, you can pour the blended sauce back into the pan and simmer on low until it has thickened. This will enhance the flavor of the sauce even more!
Finally, scoop some potatoes into a bowl, add a couple spoonfuls of sauce, and garnish with the parsley. Serve and enjoy!
