Oil Free Masala Curry Sauce - Aloo Gobi, Chana Masala, & Biryani | SOS Free

If you're looking for a tasty sauce (no added salt, oil, or sugar) that you can use for all sorts of different dishes, then this one is it! It's as easy as making any sauce, and you can freeze it or save it in the fridge to assemble different meals throughout the week. I'm going to show you how to make 3 different plant-based dishes with this sauce: a vegan aloo gobi, a chana masala, and a biryani.

The Masala Sauce
You can use this sauce to easily make a myriad of meals. Enjoy!
Ingredients:
- 12 garlic cloves
- 1-2 Serrano peppers, seeded and chopped
- 2” fresh ginger, peeled
- 2 yellow onions, quartered
- 1 green bell pepper, quartered
- 10 roma tomatoes, quartered
- 2 teaspoons paprika
- 2 teaspoons turmeric
- 1 teaspoon ground fenugreek seeds
- 3 teaspoons garam masala
- 2 teaspoons ground coriander
- 1 teaspoon cayenne pepper (optional)
- 1-2 cups water
Instructions:
Add all of the ingredients to a high speed blender and blend well. Simmer in a pan for 5-10 minutes to bring all the flavors together. Use this as a base sauce for your meals!
