• Mmm.. salsa. I love salsa as a condiment to put on top of whatever I'm eating, whether it be beans and rice, a salad, a starch blaster, you name it. Salsa is delicious, and these 3 are no exception.

    I love how unique and easy these vegan salt-free salsas are to put together, and the longer you let them "marinate" in the fridge, the better they get! You don't need salt or oil for these, they are delicious salt free, sugar free, and oil free of course. They would be great for entertaining too...someday!

    Roasted Tomatillo Avocado

    This is one of my all time FAVORITE salsas!


    Ingredients:

    • 2 poblano peppers
    • 4-5 tomatillos
    • 2 avocados, diced
    • 1/2 medium red onion, diced
    • 1/3 cup white balsamic vinegar
    • 1 lime, juiced
    • ground pepper
    • 2 tablespoons cilantro, minced
    • 2 teaspoons garlic, minced
    • 1-2 jalapeños, diced
    • black pepper

    Instructions:

    Preheat the oven to 375° Peel and scrub the tomatillos and roast whole in a deep baking dish for 15 minutes. Slice the poblanos in half and remove the seeds. Place them face down on a lined cooking sheet and broil for 5 minutes. After they are adequately charred, remove from the oven and throw in a plastic bag and let the peppers sweat. After 5 minutes, remove from the bag and scrape off the black bits. Dice the poblanos, quarter the tomatillos, and add them to a large bowl with the rest of the ingredients. Mix well and serve.

    Shiitake Mushroom

    I love how unique this salsa is.. And how well it goes on top of literally anything!


    Ingredients:

    • 4 ounces shiitake mushrooms
    • 1 teaspoon minced garlic
    • 1/2 teaspoon minced thyme
    • 1/4 teaspoon dried oregano
    • 1 shallot, minced
    • 1/2 lime, juiced
    • pinch red pepper flakes
    • 1/4 cup balsamic vinegar
    • 1 tablespoon cilantro, chopped

    Instructions:

    Preheat the oven to 500°. Bake the mushrooms for 5 minutes. Remove the mushrooms from the oven and dice. Combine in a bowl with the remainder of the ingredients and mix well.

    Sun Dried Tomato Basil

    This recipe couldn’t be any easier.. But it will definitely add some fanciness to your plate!


    Ingredients:

    • 1/2 cup sun dried tomatoes
    • 1/4 cup balsamic vinegar
    • 5 cloves roasted garlic
    • 1/4 red onion, minced
    • 1/4 cup basil, chopped
    • 1/4 teaspoon dry oregano
    • 3 dates, chopped
    • black pepper

    Instructions:

    Add all ingredients to a large bowl and mix well. Let this mix marinate before serving.
