The second salad we whipped up was a Spicy Mango Sald drizzled with WYW Sweet Heat Dressing that gives it the perfect balance of sweet with a kick. We loved the sweetness of the fresh mango, crunch of the tortilla, and the bite of the arugula in this one. This is the perfect summertime salad!
Spicy Mango Salad
Refreshingly unique salad!
- 3-4 corn tortillas
- 2 handfuls fresh spinach, chopped
- 2 handfuls fresh arugula, chopped
- 2 tablespoons fresh cilantro, chopped
- 1 red bell pepper, sliced
- 1 mango, diced
- 1 avocado, diced
- ½ cup WYW Sweet Heat Dressing
Chop the corn tortillas into strips and air fry or bake at 400°F for just a few minutes until crispy, keeping an eye on them so they do not burn. Set aside.
Add the remaining ingredients, except the dressing, to a large mixing bowl and toss well.
To serve, top with dressing and tortilla strips, and enjoy!
The last salad we prepared was a Sweet Potato Kale Salad tossed with our WYW Balsamic Vinaigrette. We really loved how starchy and satisfying this salad is because of the sweet potato and chickpeas. This one is absolutely amazing served warm, but it is also delicious served cold too!
Sweet Potato Kale Salad
Delicious warm or cold!
- 1 sweet potato, peeled and chopped
- 1 bunch fresh kale, chopped
- 1 15 oz. can chickpeas, drained and rinsed
- ½ cucumber, chopped
- ½ red onion, chopped
- ¾ cup WYW Balsamic Vinaigrette
Add the sweet potatoes to a steamer basket and steam for about 7 minutes or until they are just a few minutes from fork tender.
Add the chopped kale and continue steaming along with the potatoes for about 3 more minutes. The kale should be fluffy and bright green, but not overcooked and mushy.
Add the potatoes and kale to a large mixing bowl along the remaining ingredients and toss well. Enjoy this one hot or cold, it’s delicious!
