Method
Add the onion and garlic to a large pot and sauté over medium-high heat for about 5 minutes, or until tender, adding water or veggie broth as needed to keep from sticking.
While the onion cooks, add the sweet potato, diced tomatoes, dates, Bayou BBQ Seasoning, and apple cider vinegar to a blender. Blend until completely smooth.
Add the pinto beans to the pot, then pour the blended sauce over everything. Stir wel to combine.
Simmer over medium-low heat for 10–15 minutes, stirring occasionally, until the sauce has thickened and the flavors have come together.
Taste and adjust seasoning. Serve as a hearty side dish or over brown rice.
